Call me a high maintenance traveler but I get so BORED with eating sandwiches on the road. If I never have to eat another meal that consists of two pieces of bread, cold meat and a slice of cheese, I would be just fine. I enjoy changing it up!!
Here is my recipe for a great Pasta Salad that you can prepare in advance. It’s a tasty meal on the road or at a picnic! Don’t let the title fool you, this is not just a summer recipe, it’s great all year long.
Summer Pasta Salad
1 – 16 oz. spaghetti noodles (thin or regular)
1 – green bell pepper
1 – red bell pepper
1 – 6 oz. can of black olives
1 cup – cherry tomatoes
1/4 cup – red onion
1 – 16 oz. pepperoni slices
1/2 lb. – mozzarella cheese
1/2 cup – Italian dressing (or zesty Italian)
1 tsp. – parsley
1 tsp. – oregano
1 tsp. – basil
Start by boiling your noodles; be careful not to over cook them. Dice red onions, green and red bell peppers. Slice in half olives, cherry tomatoes, and pepperoni slices. Dice into cubes mozzarella cheese.
Wait until noodles are completely cool. Add all of the ingredients together. Refrigerate for at least 2 hours.
We love parks, picnics and family time, this is a great recipe to take with you on your next outdoor adventure. It is a healthy and refreshing recipe! Don’t worry if it’s something your kids won’t enjoy. Buy some extra pepperoni and cheese, add some crackers and you have a kid friendly lunch! Watch out for the ants!
